Because Christmas is about giving.
The joke “Why don’t Jews celebrate Christmas? Because Christmas is about giving” plays on a stereotype about Jewish people being miserly or not generous. The punchline hinges on the notion that since Christmas is a holiday associated with giving (gifts, charity, etc.), Jewish people don’t participate in it due to their supposed aversion to giving.
They don’t want to be on anymore lists.
The prefer to pass-over the Christmas rush.
Because they’re holding out for the eight nights of Hanukkah gifts instead!
